Peel and Slice Apples into a large bowl.

Mix Sugar, Flour, Cinnamon, Nutmeg and Minute Tapioca into the Apple Slices (Step 1).

Set aside and let sit while making the crust.

Start bringing water to a boil for a future step

Sift together Flour and Salt into medium bowl

Mix Shortening, Milk, and Boiling Water (Step 3) in a large bowl until texture similar to cream .

Hand Mixing this step is suggested

Add dry ingredients (Step 5) to wet ingredients (Step 6) and hand mix until a dough ball forms.

Split the ball in half (1/2) for the top and bottom of the crust.

Place each half in between two pieces of wax paper that have been sprinkled with flower and roll into two 1/4 inch thick circles

Preheat oven to 400°F

Place one half of the rolled out dough into the pie pan

Sprinkle Minute Tapioca on the bottom of the lower crust.

Put Apple Filling mixture (Step 2) into the pie pan creating a slight dome shape.

Dice Butter into small pieces and place around the top of the apples.

Add Lemon Juice over the top of the apples.

Place the other half (1/2) of the crust dough on top.

Crimp Edges of the top dough to the bottom dough.

Cut six (6) 1 inch slices in the top crust to vent.

Mix together Egg Whites with Water and spread over top of the pie with a brush.

Place foil-lined baking sheet on bottom shelf of oven to catch drippings.

Bake 15 minutes at 400°F

Continue Baking for 45 to 50 minutes at 350°F

The Pie will be finished cooking when the filling starts to bubble and come through the top crust.

Continue Baking in 5 minute intervals at 350°F until you see the bubbling.
